Protein Pancakes

Protein “Pancakes” (a.k.a. Protein Crepes)

6 oz. Greek yogurt
¼ c. flour (I use white whole wheat)
¼ c. vanilla protein powder
1 egg (or 1 egg white)
1-2 tsp. vanilla
1 tsp. baking soda

Mix all ingredients.
Cook on hot griddle or skillet.  (For crepes, I love pressing them thin on the flat plates of our Cuisinart Griddler)
Turn 2-3 times until browned and crispy on the outside.




Fruit Topping

Place 1 c. of frozen fruit/berries in a small saucepan.  Add apx. ¼ c. water.  Cook until fruit is thawed and liquid is boiling.  Add Splenda or stevia to taste to sweeten your “syrup.”  Add 1tsp. cronstarch that has been mixed into 2 tsp. of water to thicken.  Cook 1-2 more minutes.
